While the microwave zucchini frittata involves browning the zucchini in the microwave, for this recipe I used the idea of the microwave asparagus frittata, cooking the potatoes by steaming them in the microwave which I then used to make the frittata. In this way, I obtained a light potato frittata, similar to the microwave vegetable frittata.

Ingredients for Potato Frittata
- 2 potatoes (medium, about 150 g each)
- 4 eggs
- 2 pinches salt
- 2 pinches pepper
- 1 bunch aromatic herbs (to taste, among parsley, savory, thyme, basil)
- 1 tablespoon extra virgin olive oil

Procedure
Wash the potatoes thoroughly and dry them. Make small holes in the potatoes so they won’t explode during cooking. Place the potatoes on a plate in the microwave and start cooking for 8 minutes at about 800 watts, turn the potatoes after 6 minutes. After cooking, let the potatoes rest in the turned-off microwave for 5 minutes to finish cooking.
After resting, peel the potatoes and cut them into cubes.
Crack the eggs into the bowl, add salt, pepper, and chopped aromatic herbs. Beat the eggs with a whisk or a fork, then add the cubed potatoes. Mix well. Grease the pan with oil and pour in the egg and potato mixture, distributing it evenly.
Put the frittata in the microwave and start cooking for 12 minutes using the microwave + grill combination function, choosing reduced power if possible, allowing time for the egg to cook without scrambling.
At the end of cooking, serve the frittata hot and enjoy your meal.

You can lower the glycemic index of potatoes like this: cook the potatoes the night before, let them cool with the skin on, and then store them in the refrigerator. The next day, peel and use them for all your recipes. Cooked and cooled starches undergo retrogradation.

You can add a tablespoon of grated cheese to the beaten eggs. Alternatively, add cubes of smoked cheese among the potato cubes.

In the jungle of microwave cooking containers, there are materials specifically recommended for cooking frittatas in the microwave.

Heating dish (crisp or similar crisp), perfect because it conducts heat well, reaching up to 464°F, like a pan.
Pyrex Dish, tempered glass is great for microwave cooking but clearly doesn’t conduct heat well. This means that the frittata will be softer and less golden on the underside.
Ceramic Oven/Microwave Dish, like Pyrex, it doesn’t conduct heat well but does its job by bringing the frittata to cooking.
I advise against using plastic containers, even if for microwave use. Fats are overheated by microwaves, which could cause the containers to melt or warp.
