I made it almost by accident: coming home after a busy day, I wanted a quick dessert but didn’t have the energy to turn on the oven. I found two ripe peaches on the table and improvised this quick sweet frittata without an oven inspired by my apple frittata in a pan. Well, I’ll just say it didn’t last more than ten minutes!

Ingredients
- 3 eggs
- 2/3 cup flour (the one you usually use)
- 1/4 cup sugar
- Half packet baking powder
- 3 peaches
- 2 tablespoons raisins
- 1 tablespoon extra virgin olive oil
Steps
Beat the eggs with the sugar in a bowl, you can use hand whisks, add the oil and water, mix vigorously.
Gradually add the flour with the baking powder and finally the peaches cut into small pieces.
Mix well, oil a pan and heat it then pour the mixture and cook with the lid closed for about 7 minutes.
Cook over very low heat, check occasionally, if needed add a little oil, be careful because it burns underneath.
As soon as the top is no longer liquid, turn it with a spatula and cook the other side for another 5-7 minutes.
