Air Fryer Brioche Savories

The air fryer brioche savories are the perfect idea for a family dinner or your holiday savory buffet.

Delicious and easy to prepare, great to eat hot or cold, ideal to take with you for outdoor picnics.

I filled the air fryer brioche savories with ricotta, cooked ham, and shredded mozzarella; with every bite, you will feel the softness of the brioche and the tenderness of the filling.

For air fryer cooking, I recommend preparing half the amount, as the cooking takes place in multiple steps since the basket is small and it would take a long time to cook.

Ingredients

  • 5.3 oz Manitoba flour
  • 14.1 oz all-purpose flour
  • 1 egg
  • 1.3 cups milk
  • 1/4 cup vegetable oil
  • 0.7 oz salt
  • 0.35 oz yeast
  • 1 tsp sugar
  • 8.8 oz cow's milk ricotta
  • 5.3 oz cooked ham in one slice
  • 3.5 oz shredded mozzarella
  • 2 tbsp grated parmesan
  • 2 eggs (one for brushing)
  • a pinch of white pepper
  • to taste poppy seeds (optional)

Steps

  • Mix the two types of flour in a bowl and add the egg, oil, and teaspoon of sugar.

  • Warm a glass of milk slightly to dissolve the yeast, pour into the bowl, start kneading first with a wooden spoon, then add the salt and the rest of the milk and continue kneading by hand until you obtain a firm dough ball.

  • Wrap in plastic wrap and let rise in the oven with the light on for 2 hours.
    After time has elapsed, your dough will have doubled in size.

  • Prepare the filling by cutting the ham slice into small cubes.

  • Pour the ricotta into a bowl, mash with a fork, add a beaten egg, a pinch of white pepper, and mix.
    Incorporate the cooked ham cubes.

  • Complete the filling with the addition of parmesan and shredded mozzarella.

  • Roll out the dough to a thickness of 0.2 inches and use a cookie cutter to cut out circles.

  • Roll out the circle with a rolling pin and place some filling on top, close with another circle.
    Use the prongs of a fork to seal the edge, brush with beaten egg, and decorate with poppy seeds.

  • Line the air fryer basket with parchment paper and place the savories for cooking.
    Set the temperature to 356°F for 20 minutes. After 10 minutes, flip the savories to cook evenly.
