Lasagna with Pumpkin, Scamorza, and Ham is a truly rich and tasty main dish, perfect for fall and winter. Baked lasagna is a very hearty dish, and enriched with pumpkin, scamorza, and ham, it’s perfect to serve as a main course.
Since I love pumpkin, I tried this combination to make a somewhat unique lasagna, overall it is easy to make, especially if you use the ready-made egg pasta sheets, otherwise you can prepare them with my recipe for homemade lasagna.
If you like rich dishes, and lasagna in particular, you certainly can’t miss this recipe!

Ingredients
- 3.5 oz egg lasagna sheets
- 1.25 cups béchamel sauce
- 7 oz pumpkin
- 7 oz cooked ham
- 3.5 oz scamorza
- 1 oz Parmigiano Reggiano DOP (grated)
- to taste extra virgin olive oil

Steps
Wash and clean the pumpkin, then slice it very thinly and remove the skin. Since the pumpkin will not be pre-cooked but will cook in the oven with the lasagna, it’s important for the slices to be very thin. You can choose to slice them with a mandoline, or if you prefer, you can cut it into very small cubes.
Prepare the béchamel sauce with my recipe HERE.
Take a lasagna dish, spread a spoonful of béchamel sauce on the bottom and then lay the first sheet of lasagna.
Place the pumpkin slices on the sheet, then cover with pieces of smoked scamorza and then with slices of ham.
Cover with a generous amount of béchamel. Then cover with another sheet and so on, repeating the steps three times.
Finish on the top with béchamel, tiny cubes of pumpkin, clumps of cooked ham, and pieces of scamorza.
Before baking, add a sprinkle of grated parmesan and a nice drizzle of oil.
Bake in a preheated static oven at 355°F for 30 minutes, until the top is golden brown.
Once ready, remove from oven and let rest for 5/10 minutes before serving.
STORAGE
Store the lasagna with pumpkin, scamorza, and ham in the fridge for up to 4 days.
