Cherry Tomatoes with Tropea Onion and Gratinated Bacon

The gratinated cherry tomatoes with Tropea onion and bacon are a quick side dish to prepare to complete a meal with meat, eggs, or cheese.

A tasty and tempting alternative to the usual salad tomatoes, with few ingredients you will prepare a delicious side dish.

In my recipe, I used juicy and tasty Piccadilly cherry tomatoes, small bites, but if you prefer, you can also use larger tomatoes by slicing them.

I flavored the recipe with Tropea onion, aromatic breadcrumbs, and enriched the taste with diced smoked bacon that you can replace with diced cooked ham.

The gratinated cherry tomatoes with Tropea onion and bacon are excellent both hot and cold, making them a great meal to take with you for a work lunch break.

Ingredients

  • 1.1 lbs Piccadilly cherry tomatoes
  • 3.5 oz diced smoked bacon
  • 1 Tropea onion
  • 1.75 oz breadcrumbs
  • 3 tbsps grated Grana cheese
  • 1 tbsp pickled capers
  • 3 leaves basil
  • to taste salt
  • to taste oregano
  • to taste extra virgin olive oil

Steps

  • Let’s prepare all our ingredients:

    Wash and cut the cherry tomatoes in half, season with salt.

    Clean and slice the Tropea onion into rings, separating the rings, add a little salt.

    Prepare the breading by adding the grated cheese, oregano, finely chopped basil, and rinsed and squeezed capers to the breadcrumbs, mix everything.

  • Line the baking tray with parchment paper and pour a little oil, brush to distribute it.
    Place the cherry tomatoes on the tray.

  • Cover the cherry tomatoes first with the onion rings, then with the breading, and finally, sprinkle the diced smoked bacon on top.
    Put in the oven at 390°F for about 30 minutes.
