Today we are making delicious sugar-free muffins, perfect for breakfast and snacks. These muffins are perfect for those who don’t want to give up a treat but at the same time want to avoid too much sugar. They are also perfect for those who cannot consume sugar and are looking for alternatives.

In this recipe, I replaced sugar with erythritol, a natural calorie-free sweetener. Erythritol is well tolerated and does not cause blood sugar spikes. Naturally, before using it, read the instructions on the package. For example, it is not suitable for children.

I want to specify that even though the muffins have an excellent texture and are very soft, in terms of taste, they differ from classic muffins. In fact, using erythritol, you will not taste the very sweet flavor we are used to.

I added unsweetened cocoa powder and some chopped chocolate to the ingredients. If you want a really light version, do not add the chopped chocolate. You can replace it with chopped nuts.

Ingredients

  • 1 egg
  • 100 g erythritol
  • 1/2 cup milk
  • 1.4 oz sunflower oil
  • 1 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1.8 oz dark chocolate (chopped)

How to Prepare Muffins with No Added Sugars

  • In a bowl, add the egg and erythritol. Mix with a spoon.

  • Add the milk and oil. Mix with a spoon.

  • Add the flour, cocoa, and baking powder. Mix with the spoon, being careful not to create lumps.

  • Add the chopped chocolate and incorporate it by mixing with the spoon.

  • Pour the obtained mixture into the muffin molds.

  • Bake in a preheated, static oven at 356°F. Let it cook for about 20/25 minutes. Please check the cooking times according to your oven.

  • Remove from the oven, let cool slightly, and enjoy.
