Low Glycemic Index Paradise Cake is the softest cake you can have, enjoy it plain or with filling.

With beaters or the Thermomix.

This recipe can also be used to make a sponge cake for a dietetic cake.
Paradise Cake is one of the first recipes I made when I was little, experimenting with my grandma’s old recipes using a hand crank beater.
I used to bring this snack to school, but the slice never arrived whole because the scent from the schoolbag tempted me so much that I ate it piece by piece during class, and for recess, I had to settle for crumbs.
Today I have modified it to make it low glycemic.
I will show you both the recipe with the beaters and with the Thermomix.

  • 1 1/4 cup low glycemic index flour (FiberPasta or Nuvola Zero)
  • 6 eggs (take out of the fridge 1 hour before)
  • 3/4 cup erythritol (or 1/4 cup stevia)
  • 1 packet vanillin
  • 1 packet baking powder for desserts
  • 1 lemon (juice and zest)
  • 1 pan release spray
  • 2/3 cup butter (or coconut butter)

What we need for preparation

  • 1 Electric Beater or the Thermomix with butterfly
  • 1 Cake Pan pastiera pan 10"

Steps

To prepare

  • Remove from the fridge at least 1 hour before and eggs.
    Preheat the oven to 356°F and butter a cake pan about 10″.

  • Choose FiberPasta Flour or Nuvola Zero both low glycemic index, ideal for this type of preparation.

  • Sift the dry ingredients together, i.e., flour, baking powder, and vanillin.

  • Break the eggs and separate the yolks from the whites,

  • then whip the egg whites to stiff peaks.

  • Grind the erythritol to powdered sugar, then in a separate bowl beat the yolks with the erythritol until they become a cream.

  • At this point, add the egg whites, the vanillin, the previously sifted dry ingredients, the lemon juice, and zest.
    Incorporate the melted butter and mix.

  • Use a spatula with rotating movements from top to bottom to incorporate air.

    This is because low glycemic index flours are not as light as refined 00 flour.

  • Pour the batter into the pan where you have sprayed a pan release, and bake at 356°F for about 30 minutes.
    To check for doneness, do the toothpick test,

  • If it’s ready, let it cool, unmold, and sprinkle with powdered erythritol or fill as preferred.

  • Put the erythritol and lemon peel in the bowl and pulverize for 10 seconds at speed 10.

    Collect with the spatula and insert the butterfly.

    Now add the yolks, the baking powder, the filtered lemon juice, and the vanillin, the butter in pieces, and mix for 3 minutes at speed 3 at 98.6°F.

    Now transfer the mixture into a bowl and wash the bowl.

  • In the washed and dried bowl, mount the butterfly and pour in the egg whites.

    Whip them for 4 minutes at speed 4.

  • Slowly pour the yolk mixture through the hole while the butterfly is turning at speed 3.

    When you have finished the yolks, add the flour through the hole still with the butterfly running but this time at speed 2

  • Once all the flour is finished, let the butterfly spin for another 2 minutes at speed 2,

    Pour the mixture into the pan with a spray of pan release and bake at 356°F for about 30 minutes.
    To check for doneness, do the toothpick test,
