Summer Cups with Peaches, Yogurt, and Lemon Curd – Quick Dessert without Cream


I don’t like smart cooking, but if you’re looking for a fresh and light dessert to prepare in a few minutes, these summer cups with peaches are for you!

Without cream, no cooking and with just a few simple and genuine ingredients: yogurt, rusks, lemon curd, and ripe, juicy peaches.

A spoon dessert perfect for summer, to enjoy at breakfast, as a snack, or as a quick and fresh meal end.

Delicious yet light, ideal even for those who don’t want to spend too much time in the kitchen!

TIPS:

• You can replace rusks with plain cookies or coarsely crumbled ladyfingers
• If you don’t have lemon curd, replace it with citrus marmalade

Ingredients

FOR the lemon curd if you want, you can easily prepare it following my light recipe

  • 3 rusks
  • 5.3 oz plain yogurt (or Greek as you like)
  • 2 peaches (mine were small)
  • 2 tbsps lemon curd (generous)
  • 1 tsp sugar (optional)
  • to taste lemon juice (optional)

A clever dessert to prepare in advance, following these few steps

  • Coarsely crumble the rusks , leave them on a saucer, and set them aside.

  • Dice the peach and if it is already sweet, DO NOT add sugar: at least mine were super juicy, and I left them natural, without adding either lemon or sugar!

  • The same goes for the yogurt, which we can add without sweetening, but it’s up to you!

  • Now assemble the cup:
    • layer of rusks
    • spoonful of yogurt
    • teaspoon of lemon curd
    • diced peaches
    and repeat as you like!

  • Here’s a super quick dessert fresh and no-cook for summer!

Storing the Cups with Peaches and Yogurt

The sweet cups can be stored in the refrigerator for up to 2 days, well-covered with plastic wrap or in an airtight container

USEFUL TIPS:

• I recommend not freezing them (yogurt changes consistency, peaches become mushy).
• Both plain cookies and rusks seem to withstand the humidity of the yogurt better
