Store the eggplant ravioli in the fridge, still raw, for one day. If there are leftovers, once cooked, you can store them for up to two days in an airtight food container.

If you wish, you can freeze your ravioli while still raw to keep them longer. First spread them out on a tray with some space between them, then gather them in a food bag.
