An exception to the rule since puff pastry is not suitable due to its high fat content in cases of hyperglycemia, prediabetes, and diabetes.

Fats, indeed, can cause a rise in blood sugar several hours after the meal, which can mean normal blood sugar levels after 2 hours but a peak at 4-6 or even 8 hours.

However, for celebrations [Christmas and New Year, for example] and special occasions [Valentine’s Day and Ferragosto, for example], I like to use puff pastry to make crispy and tasty bites to serve: mini and not more than a couple each due to the mentioned reasons.

Ingredients

  • 1 roll light fresh puff pastry (30% less fat, round base)
  • tomato sauce (homemade)
  • grated cheese (optional)
  • mozzarella (optional)
  • oregano

Preparation

  • Remove the light puff pastry from the fridge.
    Gently unroll the puff pastry base.

    Decide the size of your mini bites and cut the puff pastry into wedges or long, thin triangles: the longer and thinner the wedges or triangles, the more delicate they are to handle, but the result is delicious!

  • • cut the round base into 4 wedges;
    • then cut each wedge in half [total 8 bites];
    • then cut each wedge in half again [total 16 bites];
    • then cut each wedge in half again [total 32 bites].

    I usually prepare 32 bites per round base.
    The longer and thinner the wedges, the more delicate they are to handle, but the result is delicious.

  • • cut the rectangular base into strips about 1.2 inches wide;
    • cut each strip [from the top left corner to the bottom right corner] obtaining two long and thin triangles.

  • Line a baking tray* with a sheet of parchment paper.
    * wide, the puff pastry bites should not overlap.

    Place the mini light puff pastry bites on the baking tray as you roll them so you don’t handle them multiple times.

    Brush the wedges or triangles with a thin layer of tomato sauce.
    Sprinkle a pinch of grated cheese and oregano.
    Roll each wedge or triangle starting from the wider side to the thinner point.
    Brush the outside of the mini puff pastry croissants with a thin layer of tomato sauce.

    In a bowl, pour the tomato sauce, then season with oregano and grind the pepper.
    Brush the wedges or triangles with a thin layer of seasoned tomato sauce.
    Roll each wedge or triangle starting from the wider side to the thinner point.
    If you have leftover seasoning, brush the outside of the mini croissants.

    In a bowl, pour the tomato sauce, then season with oregano.
    Brush the wedges or triangles with a thin layer of seasoned tomato sauce.
    Place a small cube of well-drained mozzarella or other melting cheese on the wider side.
    Roll each wedge or triangle starting from the wider side to the thinner point.
    If you have leftover seasoning, brush the outside of the mini croissants.

  • Briefly preheat the oven.
    Bake at 355°F in a fan oven for 15-20 minutes, according to the desired degree of browning.

    Serve.

  • With the same procedure but varying the shape, you can prepare light puff pastry breadsticks with pizza flavor:
    • cut the rectangular base into strips about 0.6 inches wide;
    • brush the strips with the seasoning;
    • roll the strips into twists;
    place the breadsticks on the baking tray and bake.

  • A light and healthy alternative to supermarket ready-made doughs is:
    Greek yogurt shortcrust pastry;
    a sort of hybrid between shortcrust pastry, puff pastry, and filo pastry suitable for numerous preparations [from snacks to savory pies].
