Air Fryer Potato Croquettes

Soft and tasty potato croquettes, perfect for any occasion, both as a side dish and to accompany appetizers. Thanks to the air fryer cooking method, they will be beautifully golden on the outside, while using very little oil and taking less time than the oven. The preparation is very simple: just boil the potatoes, add a few other ingredients and coat the croquettes with egg white and breadcrumbs… in this case, I added cubes of provolone inside, to have a deliciously melty center. Ingredients

  • 13.4 oz potatoes
  • Half tablespoon grated Parmesan cheese
  • 1 egg
  • 0.7 oz provolone cheese
  • 0.5 oz butter
  • garlic powder (to taste)
  • parsley (or other aromatic herbs)
  • breadcrumbs
  • extra virgin olive oil
  • salt
  • pepper

Preparation

  • Wash and peel the potatoes, place them in a container, add a little water, and cook them in the microwave for 8 minutes (at 700-750w). Alternatively, you can steam them.

    Once cooked, mash them in a bowl, add the butter, salt, and pepper.

  • Add the Parmesan, a pinch of garlic powder, and some chopped parsley. Mix and let cool for a few minutes.

    Add the egg yolk (1) and blend. If the mixture is too soft, you can add some breadcrumbs.

    Now divide the mixture into 8 balls, place 2-3 cubes of provolone in the center of each and close them, shaping them into a long form (2).

  • Dip the croquettes first in the egg white, then in the breadcrumbs (3).

    Place them in the basket of the fryer, spacing them apart, and spray them with a little oil (4).

  • Set the fryer to 392°F and cook the croquettes for 9-10 minutes, until they are golden on the surface. During cooking, turn them once or twice, spraying them with more oil.

  • The air fryer potato croquettes are ready, serve them immediately so they are crispy on the outside and melty in the center… enjoy your meal!

Tips and Notes

Cook the potatoes in the microwave or steam them, so they don’t absorb water.

You can season the croquettes with spices or herbs to taste.

You can omit the provolone if you don’t like it, or add finely chopped speck or ham.

Adjust cooking times and temperature according to your fryer model.
