Orange Shortbread Cookies, They Melt in Your Mouth

Today I made orange shortbread cookies. They are delicious. Super crumbly, they melt in your mouth. After the success of the Lemon Shortbread Cookies and the Chocolate Shortbread Cookies, I just had to make the orange version. They are too good paired with chocolate. I used the cookie press but you can easily use a piping bag with a star nozzle. They are very easy to make. I used the stand mixer but regular electric beaters will also work. However, this time I used not only butter in the dough but also my Homemade Lard and I must say the result was really very good. Crumbly, they melt in your mouth. Perfect to accompany tea or coffee.

Ingredients

  • 2 cups all-purpose flour
  • 1 egg
  • 1/3 cup butter
  • 1/3 cup lard
  • 1/3 cup powdered sugar
  • 1 orange (the zest)
  • 1 pinch salt

Tools

  • Baking Sheet

Steps

  • In the bowl of the stand mixer, whip together the powdered sugar with the softened butter and lard. Whip for about 10 minutes until it’s nice and fluffy.

  • Add the egg and continue to whip for about 5 minutes until the egg is incorporated.

  • Add the orange zest.

  • Finally, add the flour. Whip for a few more minutes.

  • Transfer the mixture to the cookie press. Choose the disc shape you prefer. There are so many to choose from.

  • Shape the cookies by simply pressing the lever. Continue until you finish the dough. Between fillings, you can also change the shape.

  • Let rest in the fridge for 15 minutes. Then bake at 350°F for about 15 minutes.
