Oven-baked mini potatoes, they look like new potatoes but they are not, even though we already know that potatoes can be bought all year round and are harvested in batches, depending on the region and the planting if we can say so. Thanks to their storage once harvested, potatoes can be consumed anywhere and anytime, Italy has this requirement to provide potatoes all year round.

Ingredients
- 1.76 lbs potatoes (mini)
- 2 tbsps extra virgin olive oil
- 1.2 tsp salt
- 1 clove garlic
- 2 sprigs rosemary
Tools
- Microwave Oven
- Plastic Wrap
- Baking Pan
Steps
Naturally, I do not peel the mini potatoes but wash and scrub them well, then place them with half a glass of water in a glass bowl covered with microwave-safe plastic wrap, and use a fork to poke holes in the wrap. Cook in the microwave for 15 minutes at maximum power.
If you stretch the plastic wrap well, you will see that a vacuum will form.
After the time has passed, remove the bowl with the now boiled potatoes from the microwave and remove the plastic wrap.
Pour the potatoes into the baking pan (without the water, of course) and season them with garlic and salt, evo oil, and plenty of fresh rosemary.
Mix the potatoes well to season them evenly.
Bake the mini potatoes in the oven for 30 minutes at 374°F
Here they are ready, mini potatoes with a soft core and a crispy crust.
