Baked Diced Eggplants

Baked Diced Eggplants, a summer-flavored recipe that can be enjoyed either hot or cold. Not only quick to prepare, but also very easy especially because the ingredients are very few. I know many of you don’t like turning on the oven during the hot season, thus using the oven mostly in the winter. On the contrary, I use it in the summer, in the evening, to enjoy my meals the next day, with cold dishes or at most at room temperature.

Ingredients

  • 1.76 lbs eggplants
  • 8 tablespoons extra virgin olive oil
  • 4 tablespoons breadcrumbs
  • 4 sprigs basil
  • 1 clove garlic
  • to taste salt

Preparation

After washing and drying the eggplants, remove the stem and cut them into 8 pieces. Then chop them into pieces about 1 inch, or not too small.

Place them in a large bowl and season with 4 heaping tablespoons of extra virgin olive oil, salt, a clove of garlic, and two sprigs of basil torn by hand, and mix.

Sprinkle with 4 tablespoons of breadcrumbs, mix evenly, and place the eggplants in a previously oiled baking pan. Before baking in a preheated oven at 356°F, add more oil and cook for about forty minutes, or until golden brown (crispy on the outside and soft inside).

Before serving our Baked Diced Eggplants, let them cool down or even chill and decorate with fresh basil sprigs.

Tips

We can store the diced eggplants in the refrigerator for a few days, but place them in an airtight container or sealed with plastic wrap.

Make sure the container is glass or ceramic and never plastic, as the latter continuously releases toxic substances when in contact with food.

I don’t recommend freezing them because they will lose texture and flavor, but if necessary, it is always possible.

However, remember never to thaw at room temperature but in the refrigerator to avoid unpleasant and serious food poisoning.

The microwave is very effective, both for thawing and reheating.
