Steps

To make

  • We start by choosing the ground meat: I prefer the top-quality, leaner kind, but you can also use pork, chicken, or turkey.

  • Let’s start the preparation by boiling the eggs,
    Place the stale bread cut into pieces in a bowl with milk until softened, then squeeze it and put it in a bowl.

  • Now that we have all the bases, start kneading the meatloaf.

    Take a good fresh ground meat, place it in a bowl, add the soaked and well-squeezed bread, the Sicilian breadcrumbs, the 2 eggs, a pinch of salt and pepper and start kneading.

    Do not discard the leftover milk from the stale bread, as it may help to further moisten the dough.
