Ingredients

Yogurt and Fig Cake

  • 11.6 oz all-purpose flour
  • 5.3 oz 0% fat Greek yogurt (plain flavor or regular yogurt)
  • 3 eggs (room temperature)
  • 1 to taste lemon (grated zest)
  • 6.35 oz sugar (or 7 oz erythritol))
  • 1/3 cup sunflower oil (or 3.5 oz butter)
  • 1 packet baking powder
  • 0.21 oz figs (divided for inside and decoration)
  • 5 tablespoons custard cream (optional)

Steps

Yogurt and Fig Cake

  • In a large and wide bowl, beat the eggs with the sugar (or erythritol) using electric whisks for at least 10 minutes until they are fluffy, creamy, and lightened. Then add the sunflower oil (or melted butter) and Greek yogurt, incorporate the sifted flour, and add a pinch of salt.

  • Continue to mix the batter well with electric whisks, add the lemon zest and baking powder last, and achieve a smooth and homogeneous creamy mixture without lumps.


    Once the mixture is ready, wash the figs well, pat them dry with paper towel to remove excess water, cut them into pieces, and gently fold them into the batter with a spatula.

  • Pour everything into a 9 to 10-inch greased and floured cake pan, and decorate the surface with the remaining strawberries.


    Place a teaspoon of custard in the center of each fig flower.


    Bake at 356°F for about 35/40 minutes in static mode. I always recommend the toothpick test to check if it’s cooked (if the toothpick comes out dry, the cake is ready; otherwise, cook a little longer).
    Convection mode at 356°F in a convection oven for 35/40 minutes.

  • Once it’s ready, let it cool well on a wire rack, then place it on a cake plate and dust it with plenty of powdered sugar.

Advice

If during baking the figs sink to the bottom, here is a useful trick: ten minutes before the end of baking, open the oven and add more figs on top. This way the cake will turn out perfect!

You can store it in a container, and it will remain delicious for 4 or 5 days… It’s perfect for breakfast with a good cup of milk or tea, and it’s fantastic for dunking.

I used strawberries, but feel free to use the fruit you like most, such as pineapple, peach, etc.
