Steps

  • Prepare the base
    Blend the crackers until powdered.
    Mix with the melted butter.
    Press the mixture onto the bottom of a springform pan (8–9 inches), lined with parchment paper.
    Chill in the refrigerator for at least 30 minutes.


    Soak the gelatin in cold water for 10 minutes.

  • Wash the zucchini and grate or dice them finely.
    Sauté them in a pan with a drizzle of oil for 5-6 minutes, seasoning with salt and pepper.
    Let them cool completely. Prepare the cream
    In a bowl, mix ricotta, cream cheese, and yogurt.

  • Add the cooled zucchini and cooked ham.
    Adjust with salt, pepper, and herbs.

    Dissolve the gelatin in 1 tablespoon of hot water and add it to the cream.
    Pour the cream over the cooled base.
    Smooth with a spatula.
    Refrigerate for at least 3-4 hours, preferably overnight.

  • When ready to serve, garnish with grilled zucchini slices, rolled cooked ham, and fresh basil.
    Slice and enjoy cold!
