Mediterranean-style Tuna Stuffed Peppers

How delicious Mediterranean-style Tuna Stuffed Peppers are a colorful and tasty dish that we can offer as an appetizer or as a main course.

Mediterranean-style Tuna Stuffed Peppers

  • 4 bell peppers (large, preferably yellow and red)
  • 10.5 oz white bread (or stale bread crumbs)
  • 1 green onion (small)
  • 7.75 oz cherry tomatoes
  • 2 filets anchovies in oil (optional)
  • to taste capers
  • to taste black olives
  • 5.5 oz tuna in brine (or in oil, drained)
  • 1.4 oz Parmesan cheese
  • to taste salt
  • pepper
  • to taste extra virgin olive oil
  • 2.8 oz provola cheese (or mozzarella)

Steps

Mediterranean-style Tuna Stuffed Peppers

  • To prepare Mediterranean-style peppers, wash them well under running water and then cut them in half or three-quarters, depending on their size.

    Remove the seeds and filaments.

    Grease a baking dish with extra virgin olive oil and place the peppers.

    Season with salt and a drizzle of oil.

  • Bake them for about 15/20 minutes at 392°F in static mode.

  • Meanwhile, cut the white bread, cherry tomatoes, and green onion into small pieces on a cutting board and place them in a bowl with the other ingredients, such as tuna, capers, minced anchovies, grated Parmesan, and the mozzarella or provola, also cut into small pieces.

    Then work with your hands, mixing to combine everything.

  • Take the peppers out of the oven and fill them with this mixture, helping with a spoon.

    Return to the oven for another 15 minutes at 392°F, just enough time to brown them, and remove from the oven.

    Air fryer cooking. Place the peppers in the air fryer’s basket lined with suitable parchment paper (if you don’t have it, it’s not a problem); spray with a little oil and cook for about 15 minutes at 374°F.
    They need to form a crust, so if necessary, plan for a few extra minutes.

Tips

Tuna stuffed peppers can be stored in the fridge for 2 days, well-sealed in an airtight container. I recommend warming them up or letting them sit at room temperature a bit before consuming.

You can replace the mozzarella with provola or whatever you have in the fridge.


You can skip the Parmesan and replace it with pecorino.
