First, take a stand mixer or electric beaters. In the bowl, add the egg whites and start whipping, gradually adding the sugar and the teaspoon of filtered lemon juice (without seeds). Continue to whip until the mixture becomes shiny and firm. Pour the mixture into a piping bag and form small dollops on a baking sheet lined with parchment paper.
Bake your meringues at 212°F and cook them for about an hour. At the end of cooking, slightly open the oven door and let them dry for about twenty minutes in the turned-off oven.
Once ready, place your meringues in a jar and store them for a week.
These treats are good to enjoy plain, with cream, chocolate, or to decorate a beautiful cake.
