SUPER SOFT BREAD ROLLS easy stress-free recipe, great for filling with either sweet or savory, perfect for breakfast or snack, homemade rolls made in minutes by hand without a mixer.
I wanted to make some super-soft savory rolls that would be suitable for everything: from a quick dinner to a lunch to go or breakfast. So I got to work and with just a few simple ingredients, I baked some soft butter rolls that are wonderful!
The great thing is that these homemade rolls don’t require hours and hours: with a little patience, you get a soft and elastic dough, which you can cook as you prefer – in the oven for the classic version, in a pan if you don’t want to turn anything on, or in an air fryer for a quick bake.
The result? Soft savory rolls perfect to fill with deli meats and cheeses, use as soft hamburger buns, or fill with jam and Nutella or serve as small buffet rolls. They are versatile: you can bring them to a picnic, a barbecue with friends, or keep them as a stock in the freezer.
In short, these homemade super soft rolls are a dinner-saver recipe that will win you over immediately: simple, quick, and suitable for the whole family.

- Rest time: 4 Hours
- Preparation time: 20 Minutes
- Portions: 4 Pieces
- Cooking methods: Oven, Stove, Air Frying
- Cuisine: Italian
- Seasonality: All seasons
Ingredients
- 2 cups flour (I used type 1)
- 1 egg
- 3/8 cup water (approximately)
- 1/2 teaspoon salt
- 1 tablespoon butter
- 1 teaspoon fresh yeast
Steps
Pour the flour into a bowl, add the butter in pieces, the egg, and mix with a spoon, then add the crumbled yeast and a bit of water and mix.
Gradually add the rest of the water and finally the salt, knead well, if needed add flour or water, do a few folds and let it rest in the bowl covered with plastic wrap.
Once risen, about 3-4 hours if warm, take the dough, deflate it on the work surface, do a few simple folds and divide it into pieces, decide the portion based on your needs.
I made 3 rolls that I needed for dinner, then preheat the oven to 355°F and bake for about 10-12 minutes.
Or cook in an oiled pan with the lid closed, turning them, or in an air fryer at 340°F for 5 minutes, then turn and cook for another 5 minutes or so.
Bon appétit

Extra tips
For buffets or aperitifs, prepare mini rolls and serve them as finger food.
If you want a more rustic look, brush the rolls with oil and sprinkle with sesame seeds or chopped rosemary.
To make them even more fragrant, add a pinch of herbs to the dough.
Store them in a well-sealed bag: they stay soft for 2-3 days.

Yes! Once cooled, freeze them in bags and warm them up when needed: they return to being just like freshly made.
What is the best filling for the super soft rolls?
With ham and provolone they are fantastic, but also with salami, speck, or creamy cheeses they become irresistible, or with Nutella or jam for breakfast.
Is it possible to make them without butter?
