The pastry with vegetables in air fryer is a quick recipe to serve as a main dish or, cut into pieces, as an appetizer. A savory pie in the air fryer enriched with cherry tomatoes, peppers, and zucchini, at the end of cooking, I made it special by adding crumbled feta and herbs. After trying the zucchini savory pie in the air fryer, I wanted to experiment with this version that closely resembles the vegetable quiche but without using cream and eggs, making it a light savory pie cooked in the air fryer. Start by making braised vegetables in the air fryer, then cover them with two layers of puff pastry and cook in the air fryer. Once inverted, like a quiche, garnish as desired with feta and herbs. A delight that everyone loved.

Ingredients to make the puff pastry quiche in air fryer
- 1 red onion
- 1 red bell pepper (about 7 oz)
- 250 g cherry tomatoes
- 1 zucchini (about 4.6 oz)
- 2 tablespoons extra virgin olive oil
- 3 pinches salt
- 2 pinches dried oregano
- milk (to brush the pastry)
- 1 sheet puff pastry (rectangular)
- 120 g feta
- leaves oregano (or thyme or basil)
Tools needed
- 1 Air Fryer
- 1 Aluminum Pan 11X22 cm
- 1 Brush
Procedure
Wash and dry the cherry tomatoes, zucchini, and bell pepper. Peel and slice the onion. Distribute it in the pan, along with the cherry tomatoes. Cut the zucchini into rounds, cut the bell pepper into strips and combine them with the cherry tomatoes and onion. Season the vegetables with salt, oil, and oregano and mix. Braise the vegetables in the air fryer at 356°F for 20 minutes, stirring them halfway through cooking.
Unroll the puff pastry and cut it in two, making 2 rectangles. Remove the vegetable pan from the air fryer and gather them towards the center, leaving the edges of the pan free. Cover the vegetables with one rectangle of pastry, pressing the edges towards the pan. Brush the puff pastry lightly with milk, then cover with the second rectangle. Prick the puff pastry with a fork, then brush with a bit more milk.
Insert the pan into the air fryer and cook the pastry with vegetables for 14 minutes at 338°F. At the end of cooking, remove the savory pie from the air fryer and let it rest for 5 minutes.
Trim the edges of the savory pie to detach it from the edges. With the help of a rectangular plate, invert the savory pie. Adjust the vegetables that have shifted and garnish with crumbled feta and fresh herb leaves.
