Ingredients for Chocolate Cake with Ricotta and Sour Cherries:
Pan 10×12 inches
- 7 oz dark chocolate
- 1 1/4 cups sugar
- 1/2 cup unsweetened cocoa powder
- 5 eggs
- 1 2/3 cups flour
- 7 oz butter
- 1 packet baking powder
- rum flavor
- vanilla
- 17 1/2 oz ricotta
- 3 eggs
- 3/4 cup sugar
- 7 oz sour cherries
- vanilla
- lemon zest

Prepare the base:
Melt the chocolate together with the butter. Whisk the eggs with the sugar until you get a light and creamy mixture. Add a bit of rum flavor and vanilla,
Add the melted chocolate and butter, the flour, the baking powder, and the cocoa. Put about 3/4 of the obtained mixture in the pan.
Spread and level with a spatula.
Prepare the filling:
Place the ricotta, eggs, grated lemon zest, vanilla,
Add the sugar and mix. Put the obtained cream over the base, add the pitted sour cherries, and cover with the remaining mixture.
Bake at 356°F for about an hour.
