I chose a mix of three cereals precisely “rice, barley plus Senatore Cappelli wheat cooking 8 minutes” and deaminated it [procedure recommended for those suffering from hyperglycemia].
Deamination changes the cooking times of the cereals, significantly reducing them, in this case from 8 minutes to about 5.
Shrimp [from prawns to shrimps]
It is easier for me to use prawns rather than shrimps, simply for convenience: shelling and cleaning 8 prawns is undoubtedly easier than shelling and cleaning 2 portions of shrimps.
Briefly, it should be remembered that these are crustaceans with low triglyceride content but high cholesterol content and contain a small portion of available carbohydrates, reasons why they are not indicated and included in all diets.
This applies to all species of shrimp [from prawns to shrimps].
In my husband’s meal plan, shrimp are present and classified as foods to be consumed occasionally.

Ingredients
- 5.6 oz cereal mix (rice, barley plus Senatore Cappelli cooking 8')
- prawns (minimum 4 per person)
- 1 pinch garlic powder
- 4 parsley stems
- 1.7 cups water
- 1 pinch salt
- 1 pinch mixed peppercorns (with grinder)
- to taste tomato sauce (homemade)
- 1 vegetable stock cube (homemade)
- to taste chopped parsley
- 1 drizzle extra virgin olive oil (raw)
Tools
- 1 Strainer
- 1 Bowl
- 1 Pan
Preparation
Cereal mix with shrimp
Rinse the cereals to partially eliminate the starch, then:
• soak the cereals in a bowl, in cold water, for 2 hours;
• stir occasionally;
• change the water a couple of times;
• rinse them thoroughly under running water before use.
Once the deamination process is complete, drain the cereals thoroughly by pouring them into a strainer.If you taste a grain you will have the sensation of eating cereals that have undergone a first cooking.

Clean the prawns following the procedure described in how to clean prawns:
Gently separate the heads from the bodies.
Set the heads aside for broth preparation.CLEANING THE PRAWNS
Shell the prawns.Then remove the black thread or intestine which content is not toxic but can ruin our dish:
• with a sharp knife make an incision along the back of the bodies;
• remove the black thread or intestine using a toothpick.Wash the prawns thoroughly under running water and let them drain in a colander.
Pat the residual water with kitchen paper towels.Cut the shelled and cleaned prawns into pieces.
Wash the set aside prawn heads for broth preparation under running water as if you were rinsing a small container until removing the internal organs, then let them drain in a colander.
In a hot pan, brown a sprinkle of garlic powder and heat the parsley stems.
Add the prawn heads and toast them on both sides.
Add:
• 400 ml of water;
and let cook with a lid and on low heat for 10 minutes.Turn off the heat and with the help of kitchen tongs, remove the parsley stems and prawn heads from the pan letting the retained broth come out.
Bring the prawn head broth back to a boil.
Add:
• the deaminated cereals;
• a pinch of salt;
• a pinch of pepper;
• a couple of tablespoons of tomato sauce;
• a vegetable stock cube;
and cook for 5 minutes, stirring occasionally as if it were a risotto.With the heat off:
• add the prawn pieces;
• add the parsley;
• add a drizzle of extra virgin olive oil and stir to cream.If necessary, adjust the salt and grind the pepper.
Cover with a lid and let rest for 5 minutes.Plate up.
Your cereal mix with shrimp is ready.
