FOR THE PREPARATION OF THE BEET AND FETA PESTO RECIPE
We find this type of beetroot vacuum-sealed at the supermarket, and I generally peel it using gloves and a potato peeler.
Now I add the crumbled feta, the chosen nuts (walnuts or almonds), the lemon juice, and the EVO oil.
I blend everything to complete the creamy pesto by powering the blades until a smooth and as homogeneous as possible cream is obtained!Now to adjust the taste, it’s time to taste and adjust salt if necessary, and if we want a more fluid cream, I add a little cold running water.
Et voilà, the beet and feta pesto is ready to be used immediately or stored in the refrigerator in an airtight jar for a couple of days.
