Ingredients

  • 5.3 oz beet (cooked)
  • 2.1 oz feta
  • 1 tbsp walnuts (or chopped almonds)
  • 1 tsp lemon juice
  • 1/2 tbsp extra virgin olive oil

  • to taste pepper

FOR THE PREPARATION OF THE BEET AND FETA PESTO RECIPE

  • This type of beet can be found vacuum-sealed in the supermarket, and I generally peel it using gloves and a vegetable peeler.

  • Now, I add the crumbled feta, the chosen nuts (walnuts or almonds), lemon juice, and EVO oil.
    I blend everything to complete the creamy pesto by running the blades until a smooth and as homogeneous as possible cream is obtained!

  • Now, to adjust the taste, it’s time to taste and season with salt if needed, and if we want a more fluid cream, I add a little cold running water.

  • And voilà, the beet and feta pesto is ready to be used immediately or stored in the refrigerator in an airtight jar for a couple of days.
