Ingredients
- 4 cups re-milled semolina flour
- 1.25 cups water
- 0.35 oz fresh yeast
- 1.5 tsp salt (max 2 tsp)
- 2.5 tbsp extra virgin olive oil
- as needed milk
- as needed sesame seeds

Steps
In a large mixing bowl, pour water and yeast and dissolve it well.
Once dissolved, add the semolina flour and mix the dough, add the extra virgin olive oil and gradually knead with your hands.
Place the dough on a work surface and finish by adding the salt, knead the dough vigorously for at least 15 minutes, until you form a smooth ball. Place the dough inside a “banetton” proofing basket and let it rise for at least 3 hours in the turned-off oven with the light on.
When the dough is ready, use a scraper to cut small pieces of dough, about 3.5 oz or even less if you want smaller buns. From the 3.5 oz take three balls and shape them into a bunny; also make the ears with a small piece of dough.
Above you find the complete videoAssemble the various pieces by brushing them with a little milk, finally brush it over the surface and then decorate with sesame seeds. Place the buns on a baking tray lined with parchment paper or a baking sheet and let them rest for half an hour. Bake in a preheated static oven at 355°F for about 25/30 minutes. Remember that the cooking time is indicative, always adjust with your oven. Remove the bunny buns and let them cool. Enjoy!
