Blackberry Cheesecake (No-Bake)

Ingredients for the blackberry cheesecake:
(8-inch pan)
- 9 oz biscuits
- 1/2 cup butter
- 3/4 cup blackberries
- 10.5 oz ricotta
- 3 1/2 tsp gelatin sheets
- 1/3 cup whipping cream
- 1 1/2 tbsp liqueur
- 1/2 cup sugar
- 9 oz blackberries
- 1 1/2 tbsp water
- 1 3/4 tsp gelatin sheets
- 1/4 cup sugar
Steps
The preparation of the blackberry cheesecake (no-bake) is very simple, watch the video HERE.
Base preparation:
First, crush the biscuits and combine them with melted butter. Place the mixture in the pan and press it down well.
Put in the fridge for about 30 minutes.
Cream preparation:
Add the blackberries, sugar, ricotta, and cream, and blend. Squeeze the gelatin previously soaked in cold water,
add the liqueur and let it dissolve on the stove or in the microwave. Add it to the mixture and blend for a few more seconds to mix everything well. Put the mixture over the biscuit base, level it, and place it in the fridge for several hours.
Blackberry jelly preparation:
In a small pan, place the blackberries, sugar, and water, and cook for a few minutes, then blend the mixture with an immersion blender. Off the heat, add the previously hydrated gelatin and mix.
Wait a few minutes to let the mixture cool slightly, then pour it over the cheesecake. Spread and level, and place in the fridge for another hour!
