Savory Sfogliatelle

The sfogliatelle are filled with mashed potatoes, cooked ham, and cheese; hot and stringy, they are a real treat! They are delicious hot and also good cold; for the filling, you can opt for a vegetarian version: for instance, with sautéed vegetables and cheese.

Ingredients

  • 2 potatoes
  • 1 slice cooked ham
  • 2.5 oz cheese (galbanino)
  • to taste salt
  • 2 tablespoons Parmesan cheese

Steps

  • Start by boiling the potatoes, then mash them in a bowl, season with salt, and add the cooked ham.

  • On the work surface, roll out the rectangular puff pastry, then divide it into 3 vertical parts.

  • At this point, also add the last unbuttered pastry

  • and roll the 3 overlapping strips, forming a sausage shape. Let it rest in the freezer for 20 minutes.

  • After resting, cut into slices about 0.4 inches thick with a smooth, sharp knife.

  • Take each one in your hands, gently press, and create an indentation by pressing from the center outwards with your fingers.

  • At this point, fill with the mashed potatoes, close and seal the edges well.

  • Place all the sfogliatelle on a baking tray lined with parchment paper and cook in the air fryer at 392°F for 13 minutes.

Variations

You can also bake the savory sfogliatelle in the oven for 15-20 minutes at 374°F
