Brussels Sprouts Fritters, a decidedly tasty side dish or appetizer, very easy to prepare. Usually, the cruciferous family is not too popular with children, but I can assure you that prepared this way they will love them. Even though they are fried, they will still be a healthy dish because extra virgin olive oil is used. Ideal to serve also at room temperature in a buffet, because the flavors, especially the pecorino romano, will be much more pronounced. Precisely because of the addition of this flavorful cheese, I don’t add salt, but as you may have noticed, I tend to eat rather bland. In any case, don’t overdo it in preparation because you can always add more later.

Ingredients

  • 12 oz Brussels sprouts
  • 2 eggs
  • 4 tablespoons grated pecorino romano
  • to taste salt and pepper
  • as needed extra virgin olive oil

Preparation

Clean the Brussels sprouts by removing the first leaves, which may be the worst, if any. Also, remove the stalk, wash them, and dip them in boiling water for about ten minutes, or until they have softened but are not overcooked. After this time, drain them and let them cool.

Meanwhile, beat the eggs together with the grated pecorino and optionally a pinch of salt and pepper. Simply with the bottom of a glass, press down and crush each sprout. If the sprouts are undercooked, they will tend to slip out from under the glass, so be a bit careful.

Dip them in the egg and then coat them in breadcrumbs. Press slightly and turn them over more than once to make the coating adhere well. Using whole grain bread, my fritters will certainly be darker than yours.

Put plenty of extra virgin olive oil in a non-stick pan, and as soon as it is very hot, add the fritters and cook them for a few minutes. It won’t take long since the sprouts are already cooked. You can remove them from the pan as soon as they are golden brown.

Serve our Brussels Sprouts Fritters, hot or at room temperature, depending on our needs, but in any case, they will surely be delicious.

Tips

We can store the fritters in the refrigerator for two or three days, but place them in airtight containers.

I recommend always choosing glass or ceramic ones because plastic is definitely toxic.

It is also possible to freeze the fritters just breaded, or even after frying them. The important thing is to always thaw them in the refrigerator and never at room temperature.
