Brussels Sprouts Fritters, a decidedly delicious side dish or appetizer, very easy to prepare. Usually, the cruciferous family is not very appealing to children, but I assure you that prepared this way they will love them. Even if fried, they are still a healthy dish because extra virgin olive oil is used. Ideal to serve even at room temperature in a buffet, as the flavors will be much more pronounced, especially the Pecorino Romano. Due to the addition of this flavorful cheese, I don’t add salt, but as you may have noticed, I prefer less salty dishes. In any case, don’t overdo it in preparation because you can always add it later.

Ingredients
- 12 oz Brussels sprouts
- 2 eggs
- 4 tablespoons grated Pecorino Romano

Preparation
Clean the Brussels sprouts by removing the outer leaves, if they are damaged. Also remove the stem, wash them, and plunge them into boiling water for about ten minutes, or until they soften but are not overcooked. After this time, drain them and let them cool.
In the meantime, whisk the eggs with the grated Pecorino and, if desired, a pinch of salt and pepper. Simply use the bottom of a glass to press and flatten each sprout. If the sprouts are undercooked, they might slip out from under the glass, so be careful.
Dip them in the egg and then coat them in breadcrumbs. Press them a bit and turn them over more than once to make the coating adhere well. By using whole wheat bread, my fritters will definitely be darker than yours.
Place plenty of extra virgin olive oil in a non-stick pan and, once it’s very hot, add the patties and cook them for a few minutes. It won’t take long because the Brussels sprouts are already cooked. You can remove them from the pan once they are golden.
Serve our Brussels Sprouts Fritters hot or at room temperature, depending on our needs, but in any case, they will be absolutely delicious.
Tips
We can store the fritters in the refrigerator for two or three days, but place them in airtight containers.
I recommend always choosing glass or ceramic, because plastic is definitely toxic.
It is also possible to freeze the fritters right after breading, or even after frying. The important thing is to always thaw them in the refrigerator and never at room temperature.
