The rustic pie with pesto and mortadella is a savory pie perfect for any occasion. It’s very versatile, as you can serve it as an appetizer, aperitif, or as a main dish that’s different from the usual.
For the preparation, I used a roll of pie crust, but puff pastry is also fine.
Regarding the mortadella, you can substitute it with ham.
You can prepare it in advance and warm it up slightly before serving.

- 1 roll pie crust
- 6 slices mortadella
- 3.5 oz stracchino cheese
- 2.8 oz pesto
- 2 sliced cheese

How to prepare the rustic pie with pesto and mortadella
Unroll the pie crust and place it in a 11-inch tart pan. Leave the parchment paper provided with the dough underneath. Prick the bottom of the dough with a fork.
Add three slices of mortadella.
In a bowl, combine the stracchino cheese and pesto. Mix with a spoon.
Spread small dollops of stracchino and pesto on the mortadella.
Cover with another three slices of mortadella.
Add more dollops of pesto and stracchino.
Add two broken slices of processed cheese.
Fold the edges of the pie crust inward.
Bake in a preheated static oven at 356°F. Let it cook for about 30 minutes. Please check the cooking time based on your oven.
Take it out of the oven and serve.
