Today I’m bringing you to my home in Sicily with this easy and tasty recipe that you can make with mandarins, tangerines, oranges, and clementines.
It is a lactose-free dessert served as a snack or at the end of a meal.
Delightful to the palate of the whole family, Mandarin Jelly will solve the dilemma of what to serve during the holidays.
In fact, you can prepare it in advance and serve it when needed.
For this recipe, you will also find directions for those who cannot or do not want to consume sugar with alternatives not only for sweeteners but also for starch opting for FiberPasta or oatmeal flour to thicken the mixture.

- 3/4 cup sugar (or 3/4 cup erythritol or 2 1/2 tbsp Stevia)
- 3/4 cup cornstarch (or FiberPasta flour, or oatmeal, or tapioca)
- 4 cups mandarin juice (filtered)

- 1 Strainer
- 1 Pot
- 1 Hand Whisk
- 8 Molds
Steps
To make
The first thing to do is to choose fresh and possibly organic fruits.
Juice the mandarins with the help of a citrus juicer, then filter the juice.
Once you have the juice, filter it, then transfer it to a pot.
except for 100 g that you will place in a bowl where you will combine the starch or low-GI flour, depending on what you are using.
With a fork or a whisk, mix this mixture to avoid lumps.
Now add the sugar or sweetener to the mixture and mix well.
At this point, you can combine the mixture with the mandarin juice and mix.
Transfer the mixture to a pot and turn on the heat.
Bring to a boil, always stirring, on low heat to prevent sticking.
You will see it thickens quickly.
Now turn off the heat, moisten some molds with water, and pour the mandarin jelly into 8 molds.
Let it cool at room temperature for 20 minutes and then transfer to the fridge for 4 hours, or if it’s cold enough, let them rest overnight outside the fridge.
When ready to serve, turn the molds upside down and apply slight pressure on the bottom.
The mandarin jelly is ready, enjoy your meal!

Transfer into the molds and let cool. Cover with plastic wrap and refrigerate for at least 3 hours.
Storage
Mandarin jelly keeps in the fridge for up to 3 days.

Tips
Jelly can be made with the fruit of your choice like watermelon, lemon.
