Ingredients
Ham and Zucchini Pie
- 1 puff pastry (round or shortcrust pastry)
- 3 zucchini
- 200 g mozzarella
- 150 g ham
- 3 eggs
- 50 g parmesan cheese
- 3 tablespoons milk
- to taste extra virgin olive oil
- salt
- pepper

Steps
Ham and Zucchini Pie
Trim the zucchini and then cut them into thin slices so that the cooking time is relatively short.
(If doing so with a knife, try to make them all the same size for even cooking).
Cook them in a pan with a drizzle of oil over medium heat until the zucchini are semi-cooked, then salt, stir, turn off the heat, and let cool.
In the meantime, unroll the shortcrust pastry leaving the parchment paper underneath, place it in a round baking dish 10/11 inches for savory pies or tarts and leave it ready on the table.
Prick the bottom with the tines of a fork.
Beat the eggs, add three tablespoons of milk, the parmesan cheese, and finally the diced ham and mozzarella, salt, and pepper lightly.
Pour the mixture and fold the edges of the pastry inward.
Bake the savory pie in a preheated oven, in fan-assisted mode at 392°F, for about 20-25 minutes or until the pastry has a nice golden color.
If you have a static oven, bake the savory pie at 392°F for about 30-35 minutes or until the pastry is well browned.
If you have an air fryer, prepare the savory pie in the fryer basket as described, then cook it at 392°F for about 15-18 minutes, or until the edges of the pastry are golden.Once the puff pastry is golden, turn off the oven and let cool.
Remember to let it rest for a few minutes after baking before slicing it.
This will help maintain the shape and allow the flavors to meld together.

Tips
You can store the savory pie in the fridge in an airtight container for a couple of days.
When using puff pastry, make sure to unroll it carefully and prick it with a fork before adding the filling.
This step is essential to prevent it from puffing up during baking. You can also brush the edge of the pastry with a bit of egg yolk to achieve a golden and shiny color.
You can replace the ham with mortadella or other cold cuts of your liking.
You can substitute the mozzarella with provola or whatever you have in the fridge.
You can also not use parmesan and replace it with pecorino.
Use fresh and firm zucchinis as they are sweeter; when they are bitter, they are too old.
