Beetroot Hummus, a delicious appetizer as well as very beautiful to serve because of its bright fuchsia color. It can be used to prepare delicious savory fillings, thus also replacing mayonnaise, because it can make any type of food it comes in contact with soft and tasty. Tahini along with chickpeas is an important ingredient in this recipe. It’s now found everywhere, but in case, you can also prepare it at home by finely blending 3.5 oz of sesame seeds with 1.4 oz of sesame oil or sunflower oil.

Preparation
We drain the pre-cooked chickpeas well and rinse them under running water until they have lost all the foam that has formed. Remove the skin from the beetroots after boiling and cooling them, then cut them into pieces. Place both the chickpeas and the beetroots in a food processor or blender, also add the garlic, tahini, and extra virgin olive oil.
Add salt, lemon juice, and blend finely. In this particular case, I added the lemon juice afterward, just because I forgot. It’s important, in fact, to simplify the preparation of the recipe, to organize the pre-measured ingredients and have them at hand, so as not to forget anything.
Pour our cream onto a serving plate, spread it over the entire surface, and drizzle with a little oil. Add some pepper or chili, according to your taste, and sliced almonds as desired.
Serve our Beetroot Hummus, fresh or at room temperature, as an appetizer accompanied by crackers, croutons… or as a base for savory fillings.
Tips
We can store the beetroot hummus for a few days, but in the refrigerator and inside an airtight container.
