Today I want to share with you my recipe for preparing breaded and fried round zucchini cutlets, hoping you will enjoy this delicious and easy-to-make dish.

Zucchini is a summer vegetable and can be prepared in many different ways. One of the easiest and tastiest recipes to prepare is zucchini cutlets, an appetizer or side dish that both adults and children love. To prepare these delicious cutlets, I chose to use round zucchini, specifically the round ones from Nice, with light, slightly striped skin, which have a more compact texture and are therefore ideal for breading, baking, or frying. The breading is made with eggs, grated Parmesan, salt, and breadcrumbs, which give the cutlets a crispy and golden crust. The result is a tantalizing and appetizing dish that can also be served as a quick snack.

Ingredients for Preparing Zucchini Cutlets

  • 2 round zucchini
  • 5.6 oz grated Parmesan
  • 2 eggs
  • 8.8 oz breadcrumbs
  • to taste salt
  • extra virgin olive oil

  • 1 Cutting Board

Steps to Prepare Zucchini Cutlets

  • Preparing this side dish is really simple and quick. First, beat the eggs with a pinch of salt in a deep plate, add the grated Parmesan, and mix everything well with a fork.

    Wash and slice the zucchini not too thinly and then pat them dry with a paper towel. Dip each slice first in the beaten egg, and then in the breadcrumbs.

  • Continue this way with all the zucchini. Meanwhile, preheat the oven to 356°F. Arrange all the zucchini in a baking tray, add a drizzle of oil, and bake for 15 minutes.

    Once they are well golden on both sides, you can turn off the oven and enjoy your zucchini cutlets.

    They are good both hot and cold.
