Ingredients

  • 4 cups all-purpose flour
  • 3.5 tbsps extra virgin olive oil
  • 1.1 cups water
  • 2 tsp salt
  • 1 pinch baking soda (optional)
  • 2 Schnitzels (AIA Viennese Sausage)
  • 2 tbsps yogurt sauce
  • to taste arugula

How to make Flatbread with Viennese Sausage and Yogurt Sauce

  • Pour the flour and salt into a bowl, mix and make a crater in the center. Gradually add some water, the baking soda, and the oil, then mix well. Add all the water and knead everything. Transfer the mixture to the table and continue kneading until it becomes a soft and compact dough.

Wrap the dough in food wrap and let it rest at room temperature for at least half an hour.

After the resting time, divide the dough into 4 parts, then roll out your flatbreads with a rolling pin, making thin discs.

Cook the flatbreads on a griddle or in a very hot non-stick pan. Poke with the fork tines only when bubbles form; the cooking time is about two minutes per side.

Meanwhile, heat a pan with a drizzle of oil and cook your AIA Viennese Sausages for 5 minutes, turning them occasionally.

After the cooking time, fill each flatbread with arugula, Viennese Sausage, and yogurt sauce.

Tips and Variations

Flatbreads can be prepared well in advance and once cooked and cooled can be stored until the next day in a plastic bag. The Viennese sausage can also be baked in the oven without seasonings in fan mode at 428°F for 8 minutes. If you prefer a more flavorful taste, you can use classic mayonnaise instead of yogurt sauce.
