The recipe for vegetarian microwave lasagna is a quick first course. After trying microwave cannelloni and Bolognese-style microwave lasagna, I wanted to try this classic, radicchio and walnut lasagna in the microwave. The recipe is very simple. I prepared a microwave-cooked béchamel, replacing the butter with margarine*, wilted the radicchio in the microwave with the microwave-pasteurized onion and, after mixing them together, I added animal rennet-free cheese and nutritional yeast. I used the radicchio dressing and walnut crumbs to create layers with fresh lasagna sheets, and finally, I cooked the lasagna in the microwave.

- 10 sheets thin egg lasagna
- 2 cups béchamel
- 28 oz radicchio
- 1 tbsp onion (or fresh green onion)

How to Make Microwave Lasagna without Crisp
Wash the radicchio heads and cut them into strips. Distribute them in the heating tray and add the onion, or sliced green onion, oil, and salt. Mix and place the tray in the microwave, wilt for 10 minutes at 800 watts, stirring the radicchio halfway through cooking.
In the meantime, grate the emmental cheese.
After preparing the béchamel sauce, add it to the radicchio, along with the walnut crumbs and grated Swiss cheese.
Brush the tray with oil and cover with 2 sheets of lasagna pasta. Distribute some radicchio béchamel and continue with another 2 sheets of lasagna. Continue like this, creating 5 layers of radicchio lasagna, finishing with the topping and sprinkling with nutritional yeast.
Adhere the plastic wrap to the tray and poke two small holes with a toothpick.
Place the lasagna tray in the microwave and start cooking for 12 minutes at 800 watts. This way, they will remain soft and cook well.
After the first cooking step, remove the plastic wrap, being careful not to burn yourself, and put the tray back in the microwave.
Finish cooking the vegetarian microwave lasagna, using the combined microwave + grill function, at maximum power, for 8 minutes. At the end of cooking, let the lasagna rest in the turned-off microwave for 5 minutes, then serve.
