Potato salad with pesto and green beans.
You only need 3 ingredients and in no time you will prepare a healthy and tasty dish, perfect to enjoy both hot and cold.
This recipe is particularly flavorful and very easy to make. You can choose to use the pesto bought at the supermarket or prepare it yourself with my simple recipe you can find here.
Perfect to prepare in advance, this salad is ideal for picnics, outdoor lunches, or as a single dish to take to the office for a tasty lunch break.
In any case, prepare a bit more because I’m sure they’ll ask for seconds.

Ingredients
- 14 oz potatoes
- 7 oz green beans
- 5 oz Genoese pesto
- to taste salt

Steps
Peel the potatoes, wash them, and cut them into 1-inch cubes. Wash the green beans, trim the ends, and if they are long, cut them in half.
Cook the potatoes and green beans in a pot with salted water. Once ready, drain and place them in a glass baking dish or a large bowl.
Add the Genoese pesto. You can use store-bought or prepare my simple recipe which you can find here.
Mix gently and, if necessary, adjust salt to taste.
Our potato salad with pesto and green beans is ready to be enjoyed either warm or cold.
