Ingredients for 9 Pancakes
- 1 1/4 cups all-purpose flour
- 1 tsp baking powder
- 2 tbsps sugar
- 1 egg (medium)
- 3/4 cup milk
- 1 pinch fine salt
- 1 tsp vanilla extract (optional)
- 1.8 oz raspberries
- 1.8 oz blackberries
- 1/4 cup acacia honey
- 1 tbsp powdered sugar

Steps
In a bowl, pour the flour and baking powder and mix, add the sugar, a pinch of salt, the egg beaten beforehand in a small bowl, and the milk at room temperature.
Scent with vanilla extract and mix with the whisk until you get a smooth and lump-free batter. Cover with plastic wrap and let it rest for 10 minutes. If you need to use it the next day, store it in the refrigerator. Heat a non-stick pan on which we will have passed a piece of oiled paper. Over low heat, pour a ladle of batter and form a circle about 3 inches in diameter. (it will spread as it heats), if the pan allows, you can make 3-4 at a time.
After a few minutes, many small holes will form on the surface; this is the time to turn them over. Let them sit for another 2 minutes and then place them on a plate stacked over each other, so they stay warmer. With these amounts, you will have 9 Pancakes to serve for 3 portions. Place 3 on a plate, pour a drizzle of honey on top (I like acacia, but you can use whatever you prefer), and add the washed and dried berries. If you like, sprinkle a little powdered sugar, but only a little since there is already honey. The Pancakes with Honey and Berries are ready for a super breakfast.
