The shortcrust pastry with yogurt, unlike the classic, contains less butter and is soft because it includes a pinch of baking powder among the ingredients.
If done well, it holds its shape even during baking (because the use of baking powder makes it rise in the oven).
To show you that it can be kneaded in a simple and creative way, when I made the soft yogurt tart, I used the scraps to try out new molds, thus creating these cookies, soft and perfect for dunking in milk!

Ingredients
- 2 3/4 cups type 1 flour (or 00)
- 1 egg
- 1/2 cup plain yogurt (or any flavor you prefer)
- 1/2 cup sugar
- 1/4 cup butter
- lemon zest
Steps
– In a bowl, whisk together the sugar (1) with the egg (2); add the yogurt (3) and softened butter (4).
Directly in the bowl, sift the flour with the baking powder (5).
– Add the grated lemon zest (6).
Knead quickly, form a dough ball (7), roll it out on a sheet of parchment paper or wrap in plastic wrap (8) and refrigerate for at least 30′
– After the refrigeration, roll out the dough on a lightly floured work surface and cut the cookies with desired shapes.
– Bake in the oven for 15 minutes at 340°F
tips
When you roll out the dough, remember that it contains baking powder and will rise a bit during baking (especially if you are making a tart)
