Sugar-Free Low Glycemic Index Bundt Cake

The sugar-free low glycemic index bundt cake is one of those cakes I thought of for breakfast and snack time for those who want to keep an eye on their sugar intake and blood sugar levels for health or personal preference. This bundt cake is made without sugar and with low glycemic index flour, it is as soft as a cloud and while baking, it will fill your house with an amazing aroma! Once you taste it, you’ll never leave it again. It’s plain white but you can enrich it with nuts or dark chocolate pieces or a bit of cocoa and make it marbled!

Ingredients for the Sugar-Free Low Glycemic Index Bundt Cake

  • 4 eggs (XL size)
  • 2 3/4 cups low glycemic index flour
  • 2/3 cup plant-based milk (soy, almond, oat, or coconut, unsweetened)
  • 1/3 cup coconut oil
  • 1/3 cup stevia
  • 1 packet baking powder
  • 1 packet vanilla sugar
  • 1 pinch fine salt

Preparation of the Sugar-Free Bundt Cake

  • In one bowl pour the egg whites and in another the yolks.

  • Melt the coconut oil in a small pot.

  • In the bowl with the egg whites add the pinch of salt and beat them with the electric whisk until stiff, then set them aside.

  • In the bowl with the yolks pour the stevia and coconut oil, work with the electric whisk for a few seconds, then pour the plant-based milk you chose and work again with the whisk for 2 minutes.

  • Pour the flour, baking powder, and vanilla sugar into the yolk bowl, mix well with the whisk until everything is well combined.

  • Now pour the stiff egg whites into the bowl with the other mixture and using the spatula (by hand) fold them into the rest of the mixture, mixing from bottom to top.

  • Grease the mold with coconut oil and dust it with flour, shake off the excess flour and pour in the bundt cake batter.

  • Preheat the oven to 392°F, once hot, bake the sugar-free bundt cake and cook for 35 minutes, always doing the toothpick test at the end of baking (every oven is different). Once cooked, let it cool and enjoy!

TIPS

You can enrich the batter with citrus zest.

You can make muffins with this batter, just reduce the cooking time by a few minutes.
