Oven-Baked Light Bell Pepper Cubes

The oven-baked light bell pepper cubes are soft and tasty and can be enjoyed as a side dish and used in the preparation of numerous dishes [example: vegetable caponata].

I prepared my peppers with all the necessary precautions to obtain a digestible and light dish.

We consume the fruit of the peppers.
Green peppers are less ripe peppers, therefore less sweet but may cause digestive issues.
Yellow and orange peppers are ripe peppers.
Red peppers arefully ripe, therefore sweeter [with higher carbohydrate content, including sugars, than green peppers].
Due to digestive issues, I choose peppers with a square shape or, alternatively, elongated ones called bull horn or horn peppers of red or yellow color, ripe and with sweet flesh.

Oven cooking.

An excellent versatile side dish also as a sauce and seasoning, for:
• Bruschetta and crostini;
• pasta, pasta salad, and rice salad;
• preparations both with meat and fish.

Among vegetables, peppers might potentially [conditional] cause an increase in blood sugar in cases of hyperglycemia, prediabetes, and type 2 diabetes, so they should be consumed in moderation, and it’s advisable to monitor their glycemic response.

Oven-Baked Light Bell Pepper Cubes

Ingredients

  • bull horn peppers (2-3 yellow or red)
  • 1 pinch salt
  • 1 pinch mixed peppercorns (with grinder)

Tools

  • 1 Baking tray 9.8 x 11.4 inches
  • 1 Parchment paper sheet
  • 1 Bowl

Preparation

  • Wash the peppers thoroughly.
    Cut off the top part and remove the inside: remove the seeds and the white part using a knife.
    Dice into small cubes so that the cooking takes less time.

    Line a baking sheet* with a parchment paper sheet.
    *wide, peppers should not overlap.
    Arrange the pepper cubes on the tray in a single layer avoiding overlapping.
    Season with a pinch of salt and grind the pepper.

    Briefly heat the oven.
    Bake at 428°F (220°C) for 20 minutes in a ventilated oven in the upper part of the oven.

  • Remove the baking dish from the oven and mix the peppers while still hot.

    Transfer the peppers to a bowl and let them cool slightly.

  • Serve warm or cold.
    They will become softer and tastier: the more you mix them, the more succulent your bell pepper cubes will become.

    Plate up.
    Add a drizzle of oil and grind some more pepper.

    Your oven-baked light bell pepper cubes are ready.
