What You Need for Microwave Jar Cooking
You can buy jars suitable for microwave jar cooking, already equipped with 4 clamps, on the Decorazioni Dolci website, with discount code WECK10.
- 1 Microwave
- 1 Jar 500 ml with thin gasket
- 1 Bowl glass
- 1 Food wrap microwave safe
Procedure
Wash 2.2 lbs of black kale, separate the leaves from the central stalk* and place them in the bowl. Adhere 2 sheets of food wrap to the bowl and make a single hole with a toothpick. Place the bowl in the microwave and start for 12 minutes at 800 watts. At the end of cooking, let the closed bowl rest for 10 minutes. During microwave cooking, the film will swell and, as it cools, it will depressurize, creating a sort of vacuum.
Chop the garlic clove, distribute it in the jar, and add 3.5 oz of pre-cooked black kale, peeled and crushed tomatoes, salt, and oil. Clean the rim of the jar, close, and clasp, as per instructions for microwave jar cooking.
Place the jar in the microwave and start cooking for 5 minutes at your tested power, mine is 600 watts.
At the end of cooking, let the closed jar rest for at least 20 minutes or until cooled. This way the black kale will finish cooking and a vacuum will form in the jar.
Once at room temperature, you can store the jar in the refrigerator for 15 days.
Rosella Errante’s Jar Cooking Tips
The cooking times for half-liter jars are generally 6 minutes. In this case, it should be considered that the jar will boil within 3 minutes, so the additional 2 minutes will be useful to ensure a good vacuum.
How to Season Black Kale in a Jar
You can use a minced mixture of garlic and anchovies, sautéed in a small bowl for 1 minute in the microwave. Instead of the tomato, add 3.4 fl oz of water.
