Today for breakfast I made the soft yogurt brioche without eggs with sourdough. Delicious, super soft, and tasty. I made it plain, but it’s also delicious with chocolate chips. The preparation is very simple, I used a stand mixer, but it’s fine by hand too, the dough is very easy to work with. As for the yogurt, I used plain yogurt, but fruit-flavored is fine too. Ingredients
- 4 cups Manitoba flour
- 1/2 cup sugar
- 1 1/4 cup plain natural yogurt
- 5 oz liquid sourdough starter
- 1 tsp salt
- 1 packet vanilla sugar (or vanilla extract)
- 1/3 cup lard

Steps
In the stand mixer bowl, pour the flour, sugar, vanilla, salt, lard, yogurt, and sourdough starter.
Knead for a few minutes until the dough comes off the sides of the bowl. At this point, transfer it to a bowl and let it rise in a draft-free place until it doubles in size.

Transfer the dough onto a floured work surface and form 3 balls. With this recipe, I made 2 brioche loaves because my pan was quite small.
Let rise until doubled. Brush with milk and then bake at 356°F for about 40/50 minutes.
