Ingredients
Crumble Cake with Cream and Strawberries
- 3 1/3 cups all-purpose flour
- Half packet baking powder
- 3/4 cup sugar (or 170 erythritol)
- 1/2 cup butter (cold from the fridge)
- 2 eggs (room temperature)
- 2 eggs (whole)
- 2 cups milk
- 7 tbsps sugar
- 2/3 cup flour (or corn starch)
- as needed lemon (zest)
- 9 oz strawberries (nice and ripe)
- 1 tbsp sugar

Steps
Crumble Cake with Cream and Strawberries
First, make the cream because we need it cold.
Pour the milk into a pot along with the lemon peel.
Bring it to a boil and, in the meantime, whisk the eggs with the sugar until you get a light mixture. Add the flour and continue to mix well until you have a light, smooth, and homogeneous batter.
As soon as the milk reaches a boil, pour the egg mixture into it and let the milk cover it.When it is well covered, mix with a whisk, and the cream will thicken quickly.
Turn off the heat and let it cool.
Cover with a piece of plastic wrap in contact with the cream to prevent a hard film from forming on the cream.
If you want to make the microwave cream, here’s the recipe.
In a bowl, place the flour, baking powder, sugar, butter, and beaten eggs.
Start kneading quickly with your hands, crumbling the mixture, which should have a sandy consistency.
Take a 9.5-inch diameter pan. Previously greased and floured.
Pour 450 grams of the mixture into the pan and compact it well with your hands, raising it on the ring, also forming a 0.8-inch edge.
Pour the cold cream into the cake pan and level it with a wooden spoon.
Distribute the washed, dried, and chopped strawberries on top.
Add a sprinkle of granulated sugar on the surface of the strawberries.
Finally, distribute the rest of the shortcrust pastry in mounds, without pressing, to maintain the crumble effect.
Oven Cooking
Bake the cream and strawberry crumble at 356 °F in a static oven for 35 minutes, or in a fan oven at 338 °F for the same time.
Air Fryer Cooking
Place the pan in the air fryer basket and cook for 30 minutes at 320°F. After cooking, let it cool before enjoying the crumble.
