Sicilian chicken thighs as my mom used to make with lots of roughly chopped onions, potato wedges, and whole tomatoes, and of course, an exaggerated amount of fresh herbs. Today I deliberately prepared only the thighs, but the whole chicken is delicious, including the breast. Ingredients

  • 3 chicken thighs
  • 2 Tropea red onions
  • 2 potatoes (large)
  • 250 g cherry tomatoes
  • 3 sprigs rosemary
  • 2 cloves garlic
  • 6 g salt
  • 20 ml extra virgin olive oil
  • 1 glass white wine
  • to taste pepper

Steps

  • Actually, today I chose only chicken thighs, always favored by everyone. I washed the potatoes and cut them into wedges with the skin on, left the cherry tomatoes whole, cleaned the onions, and quartered them.

  • In a baking dish lined with parchment paper, I seasoned with salt, pepper, fresh and dried rosemary, extra virgin olive oil, and white wine, the chicken with potatoes, cherry tomatoes, and onions.

  • After mixing all the ingredients well, I put it in the oven at 392°F for the first 30 minutes and at 356°F for the last 30 minutes.

  • And here they are, ready, the Sicilian chicken thighs as my mom used to prepare, fragrant and succulent.
