Ingredients for Harlequin Cheesecake
- 9 oz cookies (Type gran cereale)
- 7 tbsp butter (melted)
- 1 lb mascarpone
- 1.75 cups sweetened vegetable whipping cream
- 2 tsp vanilla extract
- 1 tbsp powdered sugar
- as needed food coloring (Pink, lilac, green, orange. Preferably powder or gel)
- as needed Smarties (For decoration)

- 1 Blender / Mixer
- 1 Microwave oven
- 1 Hand whisk
Steps for Harlequin Cheesecake
To prepare the Harlequin cheesecake, we start by creating the base by crushing the cookies in the mixer. Then we melt the butter in the microwave, alternatively, a bain-marie is also fine. Let it cool down and mix it with the crushed cookies, mix the compound well and pour it into a 8/9 inch springform pan.
Put the base of our cheesecake to rest in the fridge for 30 minutes, in the meantime, let’s prepare the mascarpone cream.
In a bowl, pour the mascarpone, add the vanilla extract and powdered sugar. Mix well, once the mascarpone is combined with vanilla and sugar, whip the cream and add it. Gently combine the ingredients with a hand whisk (carefully so as not to deflate the cream) to get a smooth mixture.
Once the mascarpone cream is ready, we need to divide it into four bowls “about 0.5 lbs each.” Add a bit of coloring to each bowl and mix well, I used pink, green, lilac, and orange, but you can use your preferred colors.
In this step, I always recommend powdered coloring because liquid coloring might deflate the cream or cause issues with the cookie base, “you can find powdered food colors here “
After preparing the cream with the various colors, take the base out of the fridge and pour the colored mascarpone cream on top. After finishing, place it in the fridge to set for at least 4/5 hours. Before serving, decorate our cold cake or cheesecake with Smarties, but make sure not to decorate it before it has set in the fridge, otherwise the humidity might cause the candies to release color on the cheesecake.

Storage and variations of
Harlequin Cheesecake
The Harlequin cheesecake should be stored in the fridge for a couple of days, but without the Smarties. Alternatively, the colorful candies can be replaced with pistachio or hazelnut granules.
