The apple and raisin cake, a simple yet delicious dessert that is easy to prepare, perfect for a healthy breakfast or to end the meal on a sweet note.
For frying, we used our new Moulinex Easy Fry & Grill air fryer, an oil-free digital fryer with an electric grill.
For the baking pan, we used a high cake pan with a diameter of 7 inches.

Ingredients for the apple and raisin cake:
- 1 cup all-purpose flour
- 0.25 cup potato starch
- 0.4 cup granulated sugar
- 2 tbsps whole milk
- 0.25 cup vegetable oil
- 1 container sweet plain yogurt
- 2 medium eggs (at room temperature)
- 2 tsps baking powder
- 0.35 cup raisins
- 1 yellow or Reinette apple
- 2 tbsps granulated sugar (to sprinkle over the apples)
- 1 lemon (juice only)
- 1 pinch salt
- as needed vegetable oil
- as needed flour
Tools for the apple and raisin cake:
- 1 Baking pan 7 inches diameter
- 1 Air fryer Moulinex
- 1 Bowl glass
Preparation and cooking of the apple and raisin cake:
Peel the apple, remove the core, and slice it thinly, drizzle with lemon juice.
Place the raisins in a bowl, add hot water, and let them soak for 10 minutes to soften. (If you like, you can add rum for extra flavor).
In a large bowl, beat the eggs and granulated sugar with an electric mixer until the mixture is frothy and almost white.
Gradually add the yogurt, milk, and vegetable oil (while keeping the mixer running).
In a bowl, sift the all-purpose flour, add the baking powder, potato starch, and a pinch of salt. Mix well with a spoon.
With the mixer running, add the flours and baking powder to the batter and mix until smooth and homogeneous. Finally, add the raisins after drying them well and dusting them with flour.
Fold the raisins into the batter with a spatula.
Grease and flour the 7-inch baking pan, pour in the batter, and level it with the back of a spoon. Top with apple slices and sprinkle with granulated sugar.
AIR FRYER COOKING.
Preheat the air fryer to 320°F for 3 minutes, place the baking pan inside, and cook for about 25 minutes. Check with a skewer, it should be dry in the center.
Cooking times may vary depending on the air fryer, whether it has one or two heating elements, and its size.
Let the apple and raisin cake cool before serving.
OVEN COOKING if you do not have an air fryer:
Preheat the oven to 356°F, and when it reaches the temperature, bake for 25-30 minutes, checking with a skewer.
You can also use fruit yogurt as a substitute for plain yogurt.
Curiosity: Dusting the raisins with flour prevents them from sinking to the bottom of the baking pan.
