Ingredients for Lamb’s Lettuce Salad
- 14 oz lamb's lettuce
- 8.5 oz canned cannellini beans (weighed when drained)
- 8 oz cooked, boiled chickpeas (weighed when drained)
- 1 oz sliced almonds
- 0.5 oz pine nuts
- 2 tbsps apple cider vinegar
- 1 tbsps extra virgin olive oil
- to taste fine salt
Preparation of Lamb’s Lettuce Salad
Wash the lamb’s lettuce and let it drain well, set it aside.
In a bowl, combine the drained cannellini beans and chickpeas, add the sliced almonds and pine nuts, add the vinegar, oil, and salt, and mix well.
Finally, add the lamb’s lettuce, which should now be well-drained, mix until all ingredients are well combined, and enjoy immediately or cover with cling film and store in the fridge until ready to serve.
