These quantities make 8 muffins
- 2 cups all-purpose flour
- 0.25 cup unsweetened cocoa powder
- 0.6 cup sugar
- 2 tsp baking powder
- 0.2 tsp baking soda
- 1 pinch fine salt
- 0.4 cup dark chocolate chips (pre-chilled in the freezer)
- 1 cup milk
- 0.25 cup corn oil
- 1 egg (medium)
- 1 tbsp powdered sugar

Steps
Preheat the oven to static mode at 350°F
In a bowl, combine flour, cocoa, sugar, baking powder, a pinch of baking soda, and a pinch of salt. Mix the dry ingredients, add the chocolate chips and mix. In another bowl, pour the milk and oil.
Also add the egg, previously beaten in a small bowl, and whisk. Pour the liquid over the dry ingredients and mix slowly without overworking, always using the whisk until everything is homogeneous.
Prepare 8 muffin cups in the muffin tin. If you don’t have them, cut 16 x 16 squares of parchment paper making 4 cuts on the sides and using a jar the size of the holes give the shape. Pour the batter into the muffin cups and distribute the remaining chocolate chips on top. Bake in the middle of the oven for 30 minutes. Once baked, leave a few more minutes in the oven with the door slightly open then remove. When they are cold, sprinkle with powdered sugar.
Storage
Cocoa muffins with chocolate chips stay fresh for a few days by covering them with a glass dome.
