How to Make Delicious Potato Pandorini Appetizer
Start by boiling the potatoes until you can pierce them with a fork.
When they are ready, drain them and mash them with the potato ricer.
At this point, add salt, grated parmesan cheese, and the egg.
Once you have a homogeneous mixture, oil the pandoro molds and then sprinkle them with breadcrumbs. Fill the molds to form the flan: gradually spoon the mixture, using the back of the spoon to make it adhere to the bottom and the edge, leaving space in the center to fill with a piece of cheese.
Drizzle each flan with a thread of olive oil and bake in the oven at 356°F for about 35 minutes.
Remove from the oven, invert onto a serving plate, and decorate with a slice of prosciutto.
Storage and variations of potato pandorini
You can store the delicious potato pandorini appetizer until the next day in the refrigerator, well covered with plastic wrap. Variations to the recipe are possible, such as replacing the cheese with smoked salmon, shrimp, or diced cooked ham.
