Ingredients
- 1.76 lbs chicken breast
- 10.58 oz zucchini
- 4 tbsp breadcrumbs
- 3 tbsp extra virgin olive oil
- to taste salt
- to taste black pepper
- 1 shallot (small)
- Half glass white wine

Steps
Cut the chicken into small bites and place them in a bowl.
Wash the zucchini, remove the ends, cut them into cubes, and place them in the bowl with the chicken.
Add the breadcrumbs, 2 tablespoons of extra virgin olive oil, salt, black pepper, and mix with your hands or a wooden spoon.
In a wide pan or a wok, heat 1 tablespoon of extra virgin olive oil. Add the peeled and sliced shallot and let it brown.
Add the chicken with zucchini and sauté for a few minutes. Deglaze with white wine, let the alcohol evaporate, and cook on medium heat for about 15/20 minutes. If the meat dries out too much, you can add a little water or vegetable broth.
